Tango 2.5


So, in light of a recent grasp for more meaning and more depth in life, we are entertaining the idea of going vegetarian again, well.. I suppose I should say pescetarian with vegan influence and a limit to seafood consumption, based solely on animal welfare concerns and the demand to make a change, one starting with us.

Tonight I made one of the first vegetarian (could be vegan with slight deduction) meal that I've made in a while, well, ok.. I mean completely vegetarian. We drink soy & almond milk, we eat tofu, we eat other vegetable "meat" products, we love minus meat dishes but haven't really tried to focus on making just vegetarian or vegan fare in some time. Tonight I made vegetarian sloppy joe and put it over homemade corn cakes. It... was inspiring, it was healthy, it was filling, it was FULFILLING, it was creative and I'll be damned if it wasn't fantastic!

I used Fantastic Nature Burger as the "sloppy joe" and added your basic sloppy joe ingredients ~ ketchup, mustard (depending on the kind, may need to take this out for vegan), honey, molasses, cumin, liquid smoke, worcestershire (take this out for vegan)...I also cut up some tomatoes, onions and green chilis. I cooked the nature burger as directed and then crumbled over the sauteed veggies and added the rest of the spices and liquids. Topped it off with sour cream and green onions, obviously no sour cream for vegans.

It-was-so-good.

I'm feeling positive about tonight and the future.
