Nap Snack.

Our weekends here, for the most part are all about relax. During the week, we stay pretty busy - busy enough that when the weekends arrive, we look forward to movies on the couch, long breakfasts and naps, yes.. the weekend and naps, are they not synonymous? Today as we snuggled into our bed for an afternoon nap in the sun, Boy said "Wow, I'm hungry, you? - yesss, I need a snack!"

Boy decided on a Klondike bar and settled back into bed. I sat, rather laid there and thought and thought. Should I just go for a nap and forget the hunger? Should I have a klondike bar? I want one but I really want one later tonight... hm, really shouldn't have two today. Hmm... I am hungry though, haven't had anything since this morning's breakfast. I then sprung out of bed, off for the kitchen, boy hollering "I want one too!"

This is what I came up with:



Behold, pita pizza.. last night we had chicken parmesan for dinner, I had a chicken breast and the homemade sauce with vegetables left over. I topped a piece of flat bread with sauce, popped it in the oven to initially heat the sauce then split the breast between the two mini pizza's - topped with provolone and stuck it back into the oven. Baked for about 4-5 minutes at 400 then broiled for two minutes. Boy was surprised by my quick creation and it was quite fulfilling!

Oh right, also - we ate this in bed and then curled up to nap. Because THATS what you do on the weekends.

Oh my gosh...that looks delicious. Ah, the days of naps on the weekend...long gone once the kids came around. Oh well, looking forward to weekend naps about, oh...13 years from now :) Sounds dreamy....

Nothing like a tummy full of delicious pita pizza to start off a weekend nap! I'll have to try it myself some time.
